Something unexpected has happened since I started the 30 day vegan challenge. I don’t drink coffee anymore.
At first, I stopped drinking it at coffee shops because they only have soy milk, not soy or coconut creamers, and soy milk in coffee doesn’t do it for me. Then, as I drank coffee at home or at work with the coconut cream, I became annoyed at the not-quite-right taste and began to brew tea instead. When I ran out of coffee grinds at home, I didn’t buy any more. When I ran out of coconut creamer at work, I didn’t bother to buy any more of that either.
One day I realized that I wasn’t drinking coffee at all. I never thought that I would break free of the caffeine addiction, so this is a positive turn of events. I got peppermint tea for work and white tea for home. I plan to stop by the tea store this weekend and pick up some chai tea to try out.
Anyway, I found a new snack that’s super easy: fresh bread dipped in a sauce of olive oil and balsamic vinegar.
I don’t measure it out. It tastes fine with roughly equal amounts of vinegar and oil, or maybe a bit less vinegar depending on your personal taste. I’ve gotten in the habit of picking up a half priced baguette at the end of the day at loblaws and eating the whole thing right away.
Also, I found something new for breakfast that is working well for me. I found the original recipe on the Sprout and Pea blog, then changed the serving size to one person. I call it the Quinoa Nut and Fruit breakfast!
To make it, bring 1/2 cup quinoa, 1/2 cup soy milk, 1/2 cup of water and a pinch of cinnamon to boil. Lower the heat and simmer for about 10 minutes, until the quinoa has absorbed all the liquid.
Remove from the pan and add more soy milk, maple syrup, pecans, raisons, and any fresh fruit you like. This is a healthy breakfast because quinoa is a complete protein and a good source of iron. Pecans contain calcium, iron and fat. Yes I know that fat isn’t popular, but at the end of the day it is an essential nutrient. Cutting out meat and dairy products cuts out much of the fat we would normally get. It’s important to make sure we’re still getting enough fat from other sources.
I didn’t cook much else aside from jerk seitan with coconut rice.
I made the coconut rice by mixing one cup rice, 1 cup water, and half a can of coconut milk in a pan, bringing to a boil then simmering. You can also flavour it with whole cloves and cinnamon sticks but I prefer to keep it simple.
Another small change I have made to my lifestyle is yoga in the mornings. I like to do about 10 minutes of hip-opening stretches, like dragon, pigeon, and frog, while waiting for breakfast to cook. Eating healthy food makes me want to change other aspects of my lifestyle. The small things do count.
