So I’ve decided to cheat with my 52 Cupcakes goal by letting muffins qualify. They’re pretty much the same thing except less sugary. I’ve been trying to eat breakfast everyday but the only way that happens is if I can grab something on the way out the door and eat it while waiting for the elevator (or perhaps while running down the street). Yeah, I’m not a morning person.
I made apple crumble muffins a couple of weeks back, hoping they would solve my breakfast dilemma. I liked them so much that I made three more types of muffins for the coming weeks. I’ll keep some of them on the kitchen counter, and keep the rest in the freezer so they don’t go stale.
The muffins are as follows: apple crumb, lemon poppyseed, sunny corn (with blueberries), mocha chip. All recipes come from Isa Chandra’s cookbook Vegan with a Vengeance. As you can see from the links I’ve posted, she has a couple of the recipes listed on her website.

I’m really happy with all the muffins I’ve baked. I’ve been eating breakfast every day for the past two weeks, now! So far the apple crumble and the mocha chip are my favourites, although they’re probably also the least healthy due to the extra sugar in them. What’s your favourite muffin recipe?
